College Boy GF Bean Burritos



Muy Bueno Speedy, El Cheapo Bean Burritos

The teenager made supper last night and I'm beginning to have the confidence that he won't starve at college. He made bean burritos that he is convinced will be faster and cheaper than buying them a buck a piece and eating out of the freezer department. AND they are GF!

1 can refried beans
cheddar cheese sliced
meat/chicken/burger if you got it
salsa
corn tortillas

Heat the tortillas on both sides on the skillet, first spraying them with Pam. Spread while hot with beans from the can, a layer of cheese and fold. Serve with salsa. HA! Beans and Corn = FULL PROTEIN

He's gonna eat just fine.

Martha's Healthy Living GF Advice


Martha's last magazine, April 2010 (the annual Easter Eggs cover) has an article on GF on page 168, written by Cara Burnbaum. It's all about GF being more than medical, but healthy.

Oops, fingers on the wrong row... again...

"Updating favorite bread and pasta recipes encourages cooks to play with new ingredients and techniques. (The example was lasagna made the same, but using thin sliced zucchini ribbons for noodles.)

DO IT. Take your old favorite and change it up, modify and update. I think GF recipe modification for GF makes many of my recipes healthier.

P.S. Of the four recipes offered in the magazine, I'm trying the almond poppy crackers today.

GF Waffles for college kids


GF Cooking at College will be my topic over the next few months as the eldest son ventures off to college in but a few months.

He needs to practice some great simple, yet cheap recipes and so for three of the last four mornings this week we have eaten GF waffles. They are easy and fast if I already have the mix made up.

He uses a scoop of my pancake mix, an egg, some milk, and a glug of oil. (I increase the mix or the milk to make as many as needed.)   Easy like the old days of non-gf Aunt Jemima's buttermilk complete.   As a youth, I remember scooping it up, dumping in the milk and making pancakes for the hoard of teenagers after school and fruit waffles with ice cream late night after our dates.

I priced out the branded packages of GF pancake mix and they are twice as expensive for half as much. If I HAD TO PAY FOR THIS KID TO EAT LIKE THAT... we would be in the poor house.
This is typical for most prefab GF foods, and there is no guarantee that expensive = edible, so mix this one up for yourself and benefit on every level.

Buy in bulk and save even more.
Ah, living the G-F Reality and life is again sweet and easy.
