Thai Quinoa


I'm recipe testing today and Living Without's

Gluten-Free, Dairy-Free Thai Quinoa is in the pot.

Quinoa does indeed meet the recipe's promise and it does take on an exotic flavor in this easy, delicious side dish using coconut milk, red curry paste, and red peppers with basil. I added turkey sausage to make it a main-dish meal.

After it came to a boil on the stove, I put it in my rice cooker for 20 minutes.

It did end up light, delicious and was fast to fix but had too much dry basil for my taste. I think a half teaspoon would be plenty.
